A special celebration for a man who has contributed such much to kid lit and brought so many fun characters and rhyme time into the homes and bedtimes of many. Amaya is partial to One Fish, Two Fish, Red Fish, Blue Fish but gets a kick out of so many of the stories that we read together.
Unlike last year, a long work week and hectic schedule left me little time to prepare a celebration of sorts. Not one to pass up on any reason to celebrate, I have a soft spot for enjoying special 'holidays' like these.
So here's a throwback to last year and a quick treat to whip up to celebrate...
Green Eggs (...but no Ham)
White Cookie Icing
(we use the tube Betty Crocker brand)
Green M&Ms
(or really any small circular green candy)
Baking Sheet
Parchment Paper
- Line baking sheet with parchment paper
- Every inch and a half pipe a circular outline with cookie icing and fill it in
- Place a M&M in the center
- Refrigerate for 10 minutes to let icing harden
Enjoy the sugary goodness by itself or use it as a topper for another Dr. Suess themed cupcake or treat.
Hopefully you're having a Who of a day and are decked out in your most craziest of crazy Suess attire.
